Hola, amigos. Today is May 5, 2024, Cinco de Mayo, a holiday more celebrated in the US than in Mexico. I will honor our Mexican heritage in the western US by eating a Chilerno burger at my favorite burger place in Jackson.
Said place is Liberty Burger on N. Cache St. It’s a hole-in-the-wall diner with an amazing pressed tin ceiling that must date back to the early 1900s.
The Chilerno is first and foremost, a burger. It replaces the lettuce, tomato and onion with a layer of fresh green chili pepper, and the sauce is a creamy white Mexican cheese. Seriously tasty. I will pair it with a side of string fries dipped in chipotle catsup, and a soft drink.
